My family used to grow a lot of Colombard here in Mendocino County back in the 50's and 60's. Mainly becouse it was a heavy producer and at $100/ton that was important.
When it's not over cropped and you get it ripe enough…

What if you tried a Dry Colombard? Russian River Valley used to be planted with 70% of Colombard vineyards in the 70's. I found one of the last vineyard that is left in Russian River and made a unique dry wine that would be your perfect companion for this summer!

When it's not over cropped and you get it ripe enough to bring the acids down, it can make a very nice bright white wine. Throw it in some french oak and people will mistake it for Chard or Macon Blanc. I used it quite a bit as a base for off dry table wines. A good crisp Colombard with a hint of Muscat can definitely be handy to have around in the summer. (Beer is good too)
